Before using jacobian matrix, i declare the inputs as symbolic objects. Can anyone specify exactly what it means. What does it indicates?

Symbolic variables are not numerical, this means that they do not contain a certain numerical value. This is explained exhaustively in doc sym and the Documentation of the Symbolic Toolbox. I suggest to read the docs at first and ask a specific question, if some details do not get clear.
