If you have R2020b, see the documentation section on Large Files and Big Data. These appear to have been introduced in R2016b.
If you have an earlier version, see the appropriate documentation section in the Help Browser.

I have a new version and I created a datastore but I do not know how to access each file. Because file information is available but not the signals themselves
The data is 24 files with approximately 24 separate files in each file

I have no experience with these functions. I do not have huge files, so I cannot test them. I just provided the links to them.
If you need help with them, it would be best to use the Contact Us telephone handset icon in the upper right corner of this page to request Technical Support.
