how to interpolate a point using 2D cubic interpolation

Yes, I can. Can you? Have you bothered to look at the MATLAB tools that do interpolation? If not, then why not?

You can perform 2D Cubic interpolation using the function interp2 and specifying the method as ‘cubic’. For example, a general command would look like
Vq = interp2(X,Y,V,Xq,Yq,'cubic')
It returns interpolated values of a function of two variables at specific query points using cubic interpolation. The results always pass through the original sampling of the function. X and Y contain the coordinates of the sample points. V contains the corresponding function values at each sample point. Xq and Yq contain the coordinates of the query points.
