Editor becomes very slow

Hello,
recently I realize that aftersome time the editor starts to respond very slowly, whcih makes it impossible to continue working efficiently. To resolve the issue, I shut down Matlab and delete the preferences folder. After a fresh start it works again. However, this is annoyinh because I always have to re-initalize my preferences. Does anybody know what the problem is and how to resolve it ? Ii happens with R2018b and R2019b. I have an Imac with 10.14.6 Mojave.

I just come back to report that indeed, installing r2021a and installing the last update did the job: no lag anymore. Thanks a lot!
Edit: I talked too fast, the problem is still happening... It looks like it is becoming even more frequent.
I am not even using M1, I have a classic intel processor.

Sorry for the late reply, I did not chek.
I disabled Dictation in the System Preferences, this helped.
Choose System Preferences, Keyboard, then Dictation

meanwhile I figured out what was the cuprit, it was the actiavtion of the input via the microphone. Since I deactivated this everything is fine.
