How much would a personal license for continuing my own learning using Matlab cost me after my Machine Learning Coursera class ends early next year?

If you are a student enrolled in a degree granting instituation (does not sound as if you are though) then you would be eligible for a Student license, starting from $US50 (but the bundle is a better deal.)
If you are not a student but will be using MATLAB for non-commercial purposes, then you may be eligible for a Home license, starting from $US150 https://www.mathworks.com/store/link/products/home/ML . Note that this cannot be used for publishing papers, or any commercial activity. Note that there are some toolboxes available to students that are not available to Home license.
Otherwise, if you will be doing any kind of commercial activity or will be publishing papers and are not eligible for student or Academic license, then you would need a Standard ("commercial") license, starting from $US2250 if I recall correctly.

I am emrolled in Stanford University Coursera curriculum as a student, and have access to Standford's Matlab licence for my home assignments and exercises.
Could I qualify for $50 Student License? Also, what's the bundle pricing, and what all does it have over and above the basic package?

I do not know if you would qualify for a student license.
MATLAB and Simulink Student Suite includes MATLAB, Simulink, and 10 of the most widely used add-on products for control systems, signal and image processing, statistics, optimization, and symbolic math.
