DOES GEFORCE GTX1080 GPU WORKS WELL FOR DEEP LEARNING TRAINING??

Have a read here and here. It will greatly improve your chances of getting an answer.
On a fundamental level: the 1080 is still one of the more powerful GPUs you can buy. For a single card solution that would probably be one of the better ones. It is impossible to answer your implicit question about if your hardware setup is suitable. As I understand it, you should avoid using your GPU for you system graphics if you want it to perform optimally for deep learning.

if my MATLAB 2019a detects the cuda compatible gpu, then why my training shows no progress with gpu??
instead, it starts plotting when i select cpu, why is this so?

I believe you have another MATLAB Answers question about this? You should follow up there with the reproduction code as requested. Clearly there is something wrong with your hardware setup or with what code you're running.
