Sensor simulation - 3D laser triangulation

Hello,
I want to simulate / model the sensors that work based on laser triangulation (point and line), which allow obtaining 3D images, e.g. surfaces. The aim is to examine the ability of sensors to perform measurements of various geometric quantities, including surface topography.

The accuracy of distance measurement depends on various factors, including: surface color, reflectivity, roughness, working distance, slope to the measured surface, matrix and laser mutual arrangement, laser power and wavelength, external lighting, etc. ...
I also want to anaylyse the results, plot correlations, etc...
And I have 2 questions:
1) In what extent would Matlab be useful for this?
2) What toolboxes should be chosen for this?
