Curve fitting for 3D Scatter Plot?

Hello,

I'm new to Matlab and new to math in general. Anyways, I was wondering if there is a way to fit a curve to a 3D scatter plot? If not, what should I do/what should I learn (math concepts) so that I can find an equation that fits my data?

My data has this relationship:

The value of x is a function of y and z. Y and Z are independent to each other.
