Is there some way to write a layer which will implement unpooling in MatLab?

Hi Zoe,
Developers at MathWorks are aware of this limitation and are actively working on this. You can find "MaxUnpooling2DLayer" in MATLAB R2017b pre-release.
Please note, a function being present in pre-release does not guarantee that the feature would be present in the actual release.
