How to Trigger based on a incoming data value?

hello, I am aquiring a serial data from a sensor via xpc target. The sensor sends data in a continuous mode. I want to seperate the data byte from the packet of data. For that I want to trigger the data on the basis of a header byte say(0xC2).So that i can know where the packet starts. Can you suggest a way to do this

Is it certain that 0xC2 can never be part of the data stream, and can never occur as a checksum byte?
