matlab grid mesh/interpolation on complicated surface

Is there a way to generate an evenly-spaced grid and interpolate points on a surface at each grid point? My surface has undercuts (i.e., like something between a hemisphere and a sphere) so some of the built-in functions like meshgrid aren't working. Also, I tried using the user-submitted gridfit function, but this function was doing odd things near the bottom of my sphere-like shape and I don't think it was capturing the undercuts. Any help would be greatly appreciated!

Could you do the interpolation twice, once with each part?
