How can I analyses of speech signal by Mel map and wavelet?

Hi, I am working on speech recognition and restoration. I read an audio file to matlab and convert it to frequency domain by taking the FFT to the audio signal. Now I wont to analyses of the signal by Mel map and wavelet. please can someone help me ? I don't know how can I do this in matlab.....
