After it ends in 30 days, it will just end. You will have a choice then of continuing your use of MATLAB by paying the normal fee to buy the software. However that fee will not be any more or less depending on you having taken the free trial. And canceling the trial early will not impact anything either.

If you purchase the software, it's license period will start the day of the purchase, which is presumably on day 31 or later. I'm pretty sure you don't need to manually cancel the trial - it will just end automatically. You can make a purchase after that and the license period start time will not regress back into any date of your free trial period. It will start the day yoiu make the purchase.

Note: if you have an active trial license and you install a paid license, then the trial license will continue in effect until the end of the trial period, overriding the paid license. I speculate that the reason for this is that trial licenses are typically more powerful than paid licenses, and Mathworks is willing to give you the more powerful access until the end of your trial license.
If this situation should occur for you, then the way around it is to delete the trial license; https://www.mathworks.com/matlabcentral/answers/99147-where-can-i-find-matlab-license-files
