How do I get the properties of the .MAT file I'm importing?

I have a .MAT file that I'm exporting from ME'scope. I have run the matfile command on the workspace variable and all it tells me is that it's a complex double. I have figured out that it's a Structure, but I don't know enough about the file properties to work with it effectively.
Every .MAT file that I import, regardless of the native filename in my folder, comes in as "MEscope1". I would like to be able to rename the variable, and then I want to work on it further by performing an FFT on each column.
My objective is to get each column into an array, because each column represents the vibration data (inches/sec) over the frequency range from 0 : m_samples, i.e. the size of the array (mx1).
