Organising data for Machine Learning

Hi, I am currently using the regression tool on matlab to train sinusoidal signals, and I was wondering how to go about organising my training data into input and output matrices. Say I have a couple pairs of sine signals with a load of data points, how exactly could I organise it as pairs of inputs and outputs to be injected into the regression model?
