I'm trying to construct a hydraulic braking system with disc brake block but I found that there has no option for me to decide the radius of the disc. I want to know how to choose the size I need.

The Disc Brake block lets you specify the radius to the brake pad, which is what is needed to determine the amount of brake torque the pads can exert. The the radius of the disc itself would affect the inertia for the brake disc. That inertia is specified as part of the shaft it is connected to, typically using the inertia block.
