I have a collection of bodies connected via joints/welds etc. I can use the inertia sensor to calculate the CG of the system relative to a reference frame, but is it possible to calculate the body rates/velocity/acceleration at the calculated CG?

To get that information you would need to obtain the quantity you are measuring (velocity, acceleration) and then transform it to the frame in which you want the measurement. This can be done using various quantities in the Transform Sensor.
