I occassionally share my screen to help strangers with Matlab. I do not like that my name is always displayed in the upper right, and it is tedious finding clever ways to ensure its always covered. Is there a way to disable my real name from displaying?

You can change your username, which is what is actually displayed.

It has nothing to do with your license, it is your Mathworks account. You probably logged in to retrieve the license when you installed Matlab.
You can go to your account page on this website to change your username. You can try this direct link. There you should be able to edit your nickname on the community profile page.

Click on your name. Click "Sign out".
You will not need to sign in again until you want to install files using the Add-On Explorer.
