how to plot the norm of the estimation error dynamics, ||e(t)||2 as a function of time where the observer’s initial conditions are given?

If the error dynamics is described by a linear model Esys, then
n2 = norm(Esys, 2)
computes the root-mean-squares of the impulse response of the linear dynamic system that is equivalent to the -norm of system.

thank you for your answer Sam. But that gives me a number n2. how can I plot that ?

I guess, if the error state norm varies over time, then you probably have to compute a vector of norm over time.
