Does Matlab 2022a (Embedded Coder) support NXP S32K3xx or Arm M7 series ? Matlab also provides the option of addinig a non supported procesor under "custom processor" category. Is there any limitations of using M7 (or anyprocessor for that matter) with "custom processor" option?

Yes, NXP offers an Embedded Coder support package for the S32K3xx, which you can get via the link below.
This package is compatible with R2020a and later releases, so it will work with 22a. The package is professionally developed by NXP, and is fully complete: It contains all the needed ECoder settings, Simulink peripheral blocks, examples, and documentation to easily get your model running on an S32K3 MCU.
NXP offers techncial support for this and thier other ECoder packages via their Model-Based Design Toolbox Community:
