I have a two dimensional plot of points on the plane. However, to every point there is also one real positive number assigned. One way to plot this additional information would be as a 3-dimensional plot, but I want to plot the points in the plane and to display their height as a color (for example red - high and blue - low). Does someone know how I can do that?

Depending on exactly what you want you could use "scatter" or "pcolor". See the help for those to determine which fits your wishes better - or find pointers to other functions.
