We have just used surf and meshgrid to plot a cone, but I can't seem to get this hyberbolid :(
edit: This is what we have done just before;
r=linspace(0,1,21);
theta=linspace(0,2*pi,63);
k=1;
m=1/3
[R,THETA]=meshgrid(r,theta);
X=R.*cos(THETA);
Y=R.*sin(THETA);
Z=k.*(X.^2 + Y.^2).^m;
surf(X,Y,Z)
axis equal

You might consider this very similar example, using cylinder(),
