Formation of another matrix from where I can Plot Data

How can I open txt files folder wise and read 2nd column of txt files and store it in another matrix from where I can Plot Data? I've also attached the txt files for reference. I didn't get any confined answer

I'd start with learning how to import a single file.
This page will help you learn how to index your data. I'd also suggest completng Ch 5 of MATLAB Onramp. Ch 9 covers plotting as well. Ch 11 talks about importing data.
Perhaps this answer is helpful in seeing how to import multiple files from multiple folders.

Undefined function or variable 'readmatrix'.
Error in Test_check (line 34)
d = readmatrix(f,'Range','B1');

This is the function for loading the data. It was introduced in R2019a, so is not available to you in R2017a. However, just replace this with whatever you normally use to load your files.
