slicing a 3D volume

I have two matrices one with vertices (560 × 3) and faces (1112×3).When patch is used it forms a cylinder.
What i dont have is an eqution for V (in terms of x,y,z) to use the slice command .
How can i slice the given volume without the eqution for V.
