how to interp2 with nan data

I have [X; Y; Z] = [1,2,3,4,5 ; 2,3,4,5,6 ; 0.2, NaN, 0.1, NaN, NaN] which needs to be interpolated to [XI; YI] which are [4,5,6,7,8 ; 0,1,2,3,4]. How can I do it by removing the NaN in Z ? If I remove NaN, its no more regular grid, and does not interpolate.

I have 1800*3600 matrix, and the computation runs out of memory. Is there any other way >
