Rotation and stitching of images from a fixed infrared camera. Image reconstruction.

Hello everyone, I have a infrared camera, which is fixed over the rotating cylinder gap, which I am observing. Since camera is able only to capture a part of a cylinder, I need to build the whole picture of whole annulus. Initially all pictures are represented as a matrix with temperature data stored for every 'pixel'. Contours are presented below. I am really new to matlab. Maybe anyone can have an advice of how and with which instrument I can achieve this? Data Example is attached below also.
