Is there any way to convert multispectral images from DN values to reflectance values? I've found the dn2reflectance, but am not sure that would work with multispectral data rather than hyperspectral data.

dn2reflectance(__) would work fine as long as the metadata of you multispectral image contains the reflectance gain values. Below is an example script.
% Read the image
DNimg = hypercube('yourFileName.hdr');
% Convert from Digial Number to reflectance
reflectanceImg = dn2reflectance(DNimg);
All the above mentioned fetures come under Image Processing Toolbox's Hyperspectral Imaging Library support package, and can be downloaded from here.
