Could you please share a screenshot of the error, especially the name of the error/exception?

Hi,
I understand that you are getting an issue with plotting after installing image processing toolbox. The error messages you shared are related to the exception thrown while creating figure. Try below troubleshooting steps which might resolve your query.
  • Check the default figure create function by running the command - get(0,DefaultFigureCreateFcn) , If it returns any Simulink related libraries information then set it to empty.
  • Check plot function from where it is getting called by running the below command.
which plot
  • Uninstall the image processing toolbox as it is causing issue and reinstall it.
  • Rehash the MATLAB after installing and try to plot.To rehash execute the below command
rehash
Hope it helps to resolve your query.
